Black cocoa powder is a high-processed form of cocoa powder. It is ultra-dutch processed, meaning it is treated with an alkaline solution to reduce acidity. It’s smooth and really dark. Much darker than natural light brown cocoa.

Black cocoa powder is most commonly used for presentation. If you want a cake, biscuits or any other well-baked that are blacker than brown, this is the most suitable for you!

If your recipe requires less than ¾ cup of cocoa powder, you can usually make an even exchange without any problems.

Tips for using it:
• Black cocoa powder has almost no fat. It can make your cakes drier. If you are worried that this will happen, perhaps add a tablespoon of piles of sour cream or Greek yogurt to add some fat to your bakery products.

• Dark cocoa powder does not respond to baking soda. Due to the Dutch processing, it will not work with baking soda to get your cake rise. If your recipe has more than ¾ cup of cocoa powder, you’ll want to help give rise to your cake by adding baking powder. Start with 1 teaspoon and add up to 2 teaspoons if you need to.

Black cocoa powder does taste differently than regular cocoa powder. It is a strong flavor, but the dutch process prevents it from being bitter. You’ll find that it doesn’t taste as “chocolately” as regular cocoa powder.
